While we are nowhere near done with what seems like (and is!) a two-week, full-on Fat Tuesday indulgence with three frosted celebration cakes + boxes of chocolates (whew!), I'm very much thinking about the simplicity of the fasting many of us will do in the weeks to come. In other words: meatless meals. I've always been attracted to vegetarian eating and went full-on vegetarian for a couple of years myself at one point. Mom was so helpful! She kept reminding me of all of the options within our very own Lebanese and Mediterranean repertoire.
