We are officially in that stretch of winter where it feels like it truly will never end, everyone's tired, and my motivation to cook something "fun" is… not strong. 😅 This is the season of easy. Of dependable. Of dinners that don't require a pep talk.
So lately, I've been leaning hard into the recipes that just work. Minimal prep, doable ingredients, big flavor payoff. These are the weeknight dinners I make when I want something warm and good and satisfying, but I also want it to be done. If you're feeling that middle-of-winter slump too, this list is for us!
Every time we make this, my husband and I just look at each other and say: "How is this SO good?" Not only is warm and comforting and delicious, but it's also seriously easy to pull off. Win-win!
Like a big crunchy Italian salad, but stuffed into my favorite Trader Joe's focaccia. I think I could eat this for lunch and dinner every day right now. 😮💨
These continue to be a hit in my house, especially in the middle of winter when we can't fire up the grill for burgers. Everyone can take what they want and leave what they don't, and everyone's happy!
This green sauce brings the exact punch I need right now! Air-fried chicken thighs spiced to perfection, made crispy and thinly sliced to tuck into tortillas.
Another Trader Joe's buy coming in clutch! I've been pairing their Chicken Shawarma with lemony rice, creamy feta, and a quick slaw. It is SO good, and the perfect easy meal for a weeknight.
