We LOVE these in our house! People have literally come up to me out in the world and told me how much they like this recipe, which is kind of hilarious given how easy it is. But very on brand! I love it.
I love these because it always makes me really happy to be eating something that gives me protein AND that I actually love eating. And that cilantro pesto is the perfect little dollop on top!
I always forget that all it takes is curry paste and brown sugar to get that chicken caramelized and yummy. Love that it's 35g protein per serving, too! And the spicy cashew sauce is just a really delicious bonus.
Creamy, saucy, super fast to make, and just so delicious to curl up on the couch with. I am never not looking forward to leftovers for lunch the next day.
One of my daughters eats a full burger and the other does hers plain, without slaw and sauce, with a side of bun. π But that counts as a win in my book! My husband and I love this meal, and it's SO EASY.
