Make one recipe, or make them all! You can easily swap the recipes in and out for the days of the week that work for you.
This soup can be made ahead of time (several days and refrigerated). Pop the chilled soup in a slow cooker and heat on low until warmed through - it can stay warm in the slow cooker for several hours, if needed!
This is another great make-ahead meal since the beef cooks in the slow cooker all day. It is delicious on store bought buns or these homemade buns. Serve with fresh fruit and/or veggies and chips or crackers.
Make extra rice (or use leftovers) if making rice bowls with the Instant Pot chicken below. (This recipe makes excellent leftovers for lunch - and whether serving for lunch or dinner, we love serving it with a fried egg on top.)
The toppings on this easy French bread pizza can be customized any way you like - sub in different toppings based on your preferences. This pizza makes great lunches, too.
Make this Instant Pot chicken one night and serve on salads or make rice bowls out of it (i.e. serve the chicken on cilantro lime rice or regular white or brown rice with black beans and lots of toppings - cheese, avocados, cilantro lime or ranch dressing, tomatoes, etc). P.S. Today is Brian's birthday, and my 16-year old son is going to a girls-choice high school dance. I'm not doing the dinner for their group, but I am taking their pictures beforehand, so it's a busy day for us!
We celebrated Brian's birthday last night by shopping for some gifts for an angel giving tree as a family, eating at a sushi place for dinner, and playing games at home afterward.
Brian doesn't make a lot of appearances on the blog, but he is an incredible human (patient, funny, loyal, hard-working - his only tragic flaw, really, is his snoring problem that has kept me awake for the last 23 years 😜). We love celebrating him!
