We just finished hosting a huge family Christmas party this weekend! There were 24 people in this house! What a fun, crazy blitz. Between the leftover cookies, odd schedules, and that general "what day is it?" feeling, cooking this week needs to be easy!
This little dinner lineup is all about low effort, big flavor, and minimal thinking. Nothing requires a lot of prep, and all of them include the flavors and coziness I'm craving right now.
This one's been such a hit for us this year - storebought peanut sauce (thanks, Trader Joe's!) does double duty for the chicken and the sauce on top. Love a good shortcut!

I've had multiple people tell me they don't like salmon until they've tried this recipe! Just salmon, a four-ingredient sauce, and a quick little cucumber salad on the side. Perfection.
Another storebought sauce FTW! Crispy tofu doused in teriyaki, lots of veg and buttery avocado, spicy mayo drizzles, and (wait for it) - CRISPY ONIONS!

This recipe is already quick (just chicken and hot sauce!), but if you want to make it even simpler, you can skip the homemade ranch and get store-bought instead. So tasty, so easy!
