Three-Ingredient Grilled Chicken, No-Knead Brioche Buns, Lemon-Blueberry Crisp (Updated!) & More

Last week, in this salsa post, I shared a photo of three-ingredient grilled chicken tacos and promised to share "the recipe" soon. I've hesitated to share it sooner because it's hardly a recipe — it's taco seasoning + olive oil — and the last time I shared a recipe calling for taco seasoning, I received a comment from a woman who said, among other things, that my blog was "no longer relevant" to her.

Simplified in a factory, she wrote, thanks but no thanks.

Pointing to the "high salt" and "garlic powder (yucky)", this woman suggested: "Why not make a batch of taco spice ahead—ground ancho peppers, cumin, oregano, salt, a little smoked paprika—store in a jar and no time required on taco night?"

I love this idea in theory and hope one day to be a person who makes large batches of spice blends ahead of time, but until then I am going to continue to reach for my favorite little seasoning packets.

And besides: not all packets of taco seasoning are created equally! I recently inspected the ingredient list of my favorite one, and the most offensive ingredients were organic cornstarch and organic rice concentrate, both of which appeared toward the end of the list.

Also and more important: I'm not sure I could create a spice blend as tasty as this one — it is outstanding! So, so flavorful. I'm embarrassed to admit that I think it's the most flavorful grilled chicken I make.

This is my formula: 1 packet of chicken thighs (about 2 lbs.), 1 packet of taco seasoning, and a few tablespoons of olive oil. It takes no thought or time, and it produces perfectly seasoned meat, delicious on its own or great for chopping up and using in tacos, wraps, salads, sandwiches, etc. I usually marinate 2 packets of thighs at a time, and I use it over the course of two days.

Anyway, Friends, should you find yourself pressed for time (or not) this weekend but want to break out the grill and make a flavorful meal, give this little recipe a try. I think you'll approve!
