I keep saying that I'm going to stop mentioning how chilled to the bone I am these spring days up north in Michigan. I mean: put on a sweater, girl! My father had little patience for a complaint of any kind. Going got tough, and Dad would instruct: be a soldier. That tough-mindedness was instilled in him always, and then especially during his time serving in the U.S. Army. He was put through his paces on all kinds of scores, and proved more than up to the challenges. Memorial Day sure gives us all the opportunity to be grateful for the soldiering of so many.
Letter of appreciation to Camille S. Abood, August 20, 1958: "You have devoted yourself unstintingly in rendering assistance to personnel of your unit. Your dependable performance of duty, good judgement, and initiative have contributed significantly to the accomplishment of the mission of your unit."
So, a little chill in the air is not stopping us from soldiering to the grill here. I've been waiting to get after my Grilled Vegetable platter and now's the time. Consider this for your cookouts today, tomorrow, and then in the coming months. The char gives everything tons of flavor, but so does the addictive garlicky mint vinaigrette that dresses these beauties.
With the veggies, make a couple of great protein- and fiber-rich sides as a compliment. Scroll down for the menu, and don't forget some cookies!!
You've been stocking up on the good stuff for your pantries with our Memorial Day sale, thank you so much! Continue to save today with code SUMMER25.
Bless your hands, and those of all who have served our country,
Grilled Veggie Platter.
It's a gorgeous array! Don't skip the vinaigrette, which is just mouthwatering with garlic and mint (and great EVOO).
