I hope you had a wonderful Easter!
I had every intention of getting a newsletter out last Sunday, but we hosted Easter at our house and, wow, it was craziness. Between cooking and getting everything ready for family, it turned into a super busy weekend. But…I survived yet another holiday!
It was a great time, even though it took me about two days to recover — I was exhausted.
One thing I realized (again) is that when I host a holiday, I really need a better plan for prepping meals for the week ahead. I always mean to get some meal prep done, but somehow time slips away. And let me tell you — I felt it.
I missed having my fridge stocked with my usual go-tos, especially my mason jar salads.
Instead, I threw together some turkey wraps, which were easy but honestly not as satisfying. Thankfully, I still had ingredients for smoothies, so breakfasts were covered. For dinners, I found myself grabbing rotisserie chickens to make quick Caesar salads, and I also pulled a few things from the freezer — thank goodness for those freezer meals!
But lesson learned: hosting a holiday can easily throw me off track for the whole week if I'm not prepared. It's a good reminder how quickly one off weekend can snowball if I'm not careful.
So this weekend, I'm doubling down! I'm making sure I have smoothie kits, mason jar salads, and also stocking my freezer with a few easy meals — because freezer meals seriously save the day when life gets crazy.
Speaking of freezer meals, I'm actually working on something really exciting:
I'm putting together monthly prep-ahead plans that will include 4 weeks' worth of smoothies, mason jar salads, and 10 freezer meals you can make for the month. I'm testing everything right now, and I'll be sharing it with you in the next few weeks. Stay tuned!
My Goals This Week
The last few weeks have felt super busy with work, family, and just life.
Because of that, I've definitely gotten off track with exercise.
Eating has been okay — although this past week was rough — but I know there's room for improvement. Specifically, I want to:
- Get my portions back under control
- Focus more intentionally on protein in my meals
- Most importantly, get back to a consistent daily exercise routine
Exercise has been my biggest struggle lately. I used to be so good about it, but honestly, the last couple of years it's been a real challenge.
So my one big goal this week is to carve out time between 5:00 and 6:30 a.m. to get my workout done first thing. No excuses.
For food, my goal is simple:
- Stick to around 1500 calories a day
- Focus on getting in 80-100 grams of protein.
- No eating after 7:00 p.m.
What's On My Meal Plan This Week?
Here's a peek at some of the meals I'm prepping:
- Strawberry Avocado Smoothie: One of my favorites for healthy fats! I'm adding extra protein with cottage cheese or a scoop of protein powder.
- Greek Chicken Mason Jar Salads: High in protein, loaded with fiber, and lower in carbs — the perfect filling lunch to keep me full all afternoon.
- Buffalo Chicken Meatloaf: Super flavorful, high-protein, and low-carb — plus it's so easy to make!
- Sausage and Quinoa Stuffed Peppers: Another high-protein, high-fiber, lower-carb meal that reheats really well.
- Shredded Crock-Pot Chicken: I'll use it for quick Chicken Caesar Salads and a one-pot Chicken and Rice dinner. (I'm loading up on broccoli to bulk up the veggies and keep the carbs in check.)
- Roasted Veggies: I'm roasting a big batch of Brussels sprouts, peppers, and asparagus to have ready for quick sides all week.
