Formerly of Heston Blumenthal's world-renowned Fat Duck, Ollie now leads the charge at SOURCE — the Michelin-starred restaurant nestled within the serene surroundings of the Gilpin Hotel in the Lake District. And recently, Londoners were treated to a rare preview of this culinary mastery at the illustrious Fortnum's Food and Drink Studio.

With one Michelin star under its belt, SOURCE is already setting the bar for creative, ingredient-led fine dining — and this exclusive menu preview was no exception. Ollie Bridgwater's cooking is marked by precision, playfulness and a reverence for nature's larder. Rooted in seasonality and sustainability, his dishes are inspired not only by his technically brilliant background but also by a clear joy in flavour and form.

A New Take on Tasting Menus

Reflecting an exciting shift in modern fine dining, SOURCE recently evolved from a traditional fixed tasting menu format to a more personal, customisable experience. Guests now choose between the full SOURCE Culinary Journey and the shorter ORIGIN Dining Experience, each offering diners a chance to tailor their menu with a selection of starters, mains and desserts, while still enjoying some of the chef's signature set courses.

Bridgwater explains:

"Here at SOURCE, we're passionate about personalisation and are keen to offer our guests choice when dining with us. It's essentially a fusion of an à la carte menu and a tasting menu."

It's a concept that feels both luxurious and intimate, allowing guests to craft their own adventure while trusting in the vision of a Michelin-starred kitchen.

Ingredients from the Source

Located in Cumbria, a region now second only to London for the number of Michelin stars, the Gilpin Hotel benefits from a bounty of local produce. The Lake District's lush terrain, abundant farms and outstanding independent suppliers are central to Ollie's menus. Every dish is a tribute to what the land (and sometimes the sea) offers up.

And at this preview in Fortnum's Food & Drink Studio, the menu read like a poetic love letter to British ingredients, with a few elegant Japanese flourishes woven throughout.
