Hi ,

I'm calling it: Salad season is officially here.

The temps hit a whopping 79ยฐF in Chicago yesterday(!!), which put me in the mood for big, bright salads full of fresh spring produce.

5 Spring Salads to Make on Repeat

Judging by our April reader survey, many of you are craving salads too!

Here are 5 to make on repeat this season:

โ€‹bright spring saladโ€‹

L&L reader Andrea commented, "This is my #1 salad in the spring! The flavors, colors, and textures all blend to make the absolute most amazing salad."

โ€‹bright spring saladโ€‹

โ€‹cauliflower saladโ€‹

This bright and briny salad is basically egg salad's fresher, crunchier cousin. Made with crisp veggies, hard boiled eggs, and a creamy Greek yogurt dressing, it's a delicious side dish or meal prep lunch!

โ€‹CAuliflower saladโ€‹

โ€‹Strawberry Spinach SAladโ€‹

Quite possibly the most crave-able green salad ever! It's sweet, savory, and refreshing, filled with strawberries, feta, toasted pecans, and a tangy poppy seed dressing.โ€‹

โ€‹strawberry spinach saladโ€‹

โ€‹asparagus saladโ€‹

A celebration of spring's best produce! This salad stars tender asparagus, sweet peas, crisp radishes, and fresh herbs. A creamy avocado dressing takes it over the top.

โ€‹asparagus saladโ€‹

โ€‹broccoli saladโ€‹

With over 400 5-star reviews, this salad is a Love & Lemons reader favorite! It gets better as the broccoli marinates in the tangy dressing, so it's a great one to make ahead.

If you're celebrating Easter this weekend, any of these salads would be a perfect last-minute side dish!

You also can't go wrong with classics like

โ€‹scalloped potatoesโ€‹

Happy cooking! --Phoebe
