Crunchy fallen leaves, football games, sweaters instead of sundresses (finally!). At long last, Fall feels like it has arrived to Ohio, and here are three seasonal-ish recipes I'm making a lot lately: Pumpkin Protein WafflesI forgot how good these are! I opened a can of pumpkin puree recently to make cookies and used the rest for a double batch of these waffles. And I added a handful of chocolate chips because why not? No protein powder needed and 15 grams of protein per serving.
Sheet Pan Chicken Sausage & VeggiesThis is in heavy rotation because everyone likes it, and I usually have everything on hand. And it's easy to swap things in an out--white potatoes instead of sweet, green beans instead of peppers, veggie sausage instead of chicken. All drizzled with a sweet-and-savory maple-thyme sauce
Instant Pot Mac-n-CheeseThis is the comfort-food side dish I make when I realize at the very last minute that I didn't make a side dish. My gang LOVES this mac-n-cheese, and I can throw it together in just a couple of minutes (I usually save time and skip the breadcrumb topping btw).
