Hi reader! When I tell you I cackled as I watched my 3 young children and mashed potato-loving husband happily devour Healthy Mashed Potatoes with their dinner a few weeks ago, I am not exaggerating. Maybe I've been watching too much Disney but internally I felt like Ursula from the Little Mermaid "muwahaha-ing" with her arms reaching towards the ocean's surface, because what I didn't reveal to them prior to eating was that the silky smooth mashed potatoes were actually HALF CAULIFLOWER. Not only does cutting mashed potatoes with steamed cauliflower result in a lower carb and more nutritious side dish, but it makes for an objectively better textured mashed potato. Light and incredibly creamy, it's an upgrade all the way around. Serve this lighter dish for Thanksgiving in a few weeks, or simply as a wholesome and simple side dish for dinner tonight!
