I had salmorejo twice during the trip to Spain in 2016 - once in Cordoba, which is the region where the dish supposedly originated from, and once in Madrid with a good friend studying there. Salmorejo is a cold tomato-based soup topped with diced hard-boiled egg and Spanish ham. A rather unique blend that is different from any soup I'd had before, I'd have to say!
