Coq au Vin
Dutch oven of coq au vin.

Rich and brimming with flavor, coq au vin is a classic French stew from the Burgundy region, made with chicken and vegetables braised in red wine and crispy pancetta. It's the perfect cooking project to tackle on a chilly weekend when you've got a few hours to burn. Like most stews, it's even better the next day and freezes beautifully, too. Serve it with buttered egg noodles, mashed potatoes, or a good crusty bread—basically anything to soak up the delicious sauce.
