We've rounded up all the batch-cooking tips and hacks, plus 30 community favourite recipes to make prepping ahead as delicious as it is easy. | | One-Pan Sweet Potato & Black Bean Stew | | Packed with 20g of protein, and loaded with hearty black beans, tender sweet potatoes, and aromatic spices, this stew is as delicious as it is comforting. | | SERVES: 4 TIME: 45 minutes FOR THE STEW 1 tablespoon olive oil 1 red onion, finely chopped 2 teaspoons cumin seeds Pinch of dried red chilli flakes 4 cloves garlic, grated Small chunk of ginger (about 5g) peeled & grated 2 tablespoons tomato purรฉe 1 x 400g tin cherry tomatoes 400ml vegetable stock 2 x 400g tins black beans, drained
1–2 sweet potatoes (about 300–350g) peeled & cut into 1cm cubes 1 lime, juiced 1 tablespoon brown rice miso paste 4 tablespoons coconut yoghurt Pinch of sea salt & black pepper TO SERVE (OPTIONAL) 4 servings of cooked rice 1 avocado, finely sliced Handful of coriander leaves Dollop of coconut yoghurt | | METHOD 1. Place a large frying pan over medium heat and add a drizzle of olive oil. Once warm, add the onion and fry for 8–10 minutes until soft.
2. Tip in the cumin seeds, chilli flakes, garlic, ginger and tomato purรฉe and fry for 1–2 minutes until fragrant.
3. Pour in the tinned cherry tomatoes, vegetable stock, black beans and sweet potato; stir and cover with a lid. Simmer for 35–40 minutes until the sweet potato is soft.
4. Add the lime juice, miso and yoghurt; season to taste. Spoon into bowls and serve with rice, avocado, a dollop of coconut yoghurt and a sprinkle of coriander.
