Hi friend! The other day when I was floating down the river at about 2pm my friend Katie said, "What are we going to have for dinner tonight"? I don't think she was actually talking to me, she was just thinking out loud. Later she admitted, "I've been hungry all day and couldn't wait for dinner". Then she said, "I could fix shrimp", that is easy. I could do some rice in the rice cooker and make a salad. That would be delicious and not too bad for me". You know what? She is right! Here is a WHOLE list of EASY COMFORT FOODS that you can peruse. If you want some specific suggestions then, here are some ideas for your plans! There's enough for an entire week if you have leftovers one night and go out to eat one night! - Buffalo Chicken Tater Tot Casserole with a Cherry Tomato Salad.
- Juicy Tender Chicken Breasts (you bake them in the oven) with Sauteed Squash
- Chicken Pie and Green Pea Salad.
- Homemade Sloppy Joes and Fried Corn
- Shrimp cooked in a pan and Corn on the cob.
All of those are easy and friendly to your wallet too. That's all, I just wanted to give you a few ideas to get through the rest of the week. Secret New News: By the way, Sarah and I are going to be filming on Thursday for our new "Instant Pot Primer" that will help you figure out the basic functions of your instant pot, give you some easy to do, no fail recipes and help you get past only using your instant pot for one thing. If you want to see our current instant pot recipes, you can go here (if I did it right). But no worries, we will soon have the Primer ready and you'll be on your way to using your instant pot for more than just boiling eggs or making a roast. Ed, if you are out there, thank you for asking about the instant pot! We are coming to the rescue! Have a blessed day and please remember I love you. Wendi Jo |
