Hello and happy Saturday!
Today I'm hoping to finish my holiday shopping (we'll see if that's doable..), and then Miguel and I are most likely going out to dinner because the refrigerator is looking quite empty. Sunday is grocery shopping followed by brunch with a friend.
Sharing my newest recipes with you all below -- I hope you enjoy, and have a wonderful weekend!
Peanut Butter Chickpea Cookies
These chewy Peanut Butter Chickpea Cookies are protein-packed and loaded with plenty of peanut butter and minimal sugar. The best part is that they're gluten free, vegan and only 6 ingredients! So easy and simple to make and are so incredibly tasty!
Savory, creamy, and comforting, these Cheesy Mashed Potatoes are a fantastic side dish for family meals and holidays! The fluffy, cheesy goodness is always a huge hit and pairs well with all of your favorite main dishes. What could be better than mashed potatoes AND cheese? It's hard for me to think of anything!
A classic British dessert is made vegan in this easy Vegan Sticky Toffee Pudding recipe. Incredibly moist, sticky, and delicate, this dessert is best served with plenty of ice cream during Christmas! And that toffee sauce is to die for!
Air Fryer Hasselback Potatoes
These 35-minute Air Fryer Hasselback Potatoes taste as good as they look! Seasoned with melted butter and simple herbs and spices, the mouthwatering flavors are always crowd-pleasing while the crispy skin leaves you wanting more.
This savory and comforting Spinach Mushroom Quiche features mushrooms, spinach, and Gruyère cheese nestled in a creamy egg filling. It's an impressive and crowd-pleasing dish that always fits in at Sunday brunch, weekend breakfasts, and healthy lunches. If you're a fan of mushrooms and cheese, this recipe is definitely for you!
Thumbprint Cookies with Icing
These Thumbprint Cookies with Icing are topped with walnuts, filled with buttercream icing and are the perfect addition to your holiday cookie round up! One of my absolute favorite Christmas cookies growing up and still to this day!
