My daughter is sensitive to gluten and my son doesn't do well with dairy. I personally don't do well with corn, and my husband is currently on the GAPS diet.
None of us have "official" allergies, but knowing that certain food groups upset our tummies and our digestive system means we avoid those foods… and cooking is just as difficult as it would be if we had an official diagnosis.
When I first started cooking with these sensitivities, I tried finding recipes that were just like the foods we ate BEFORE, only allergy-friendly. That didn't get me very far.
Those recipes called for ingredients I had never heard of, EXPENSIVE ingredients, and frankly, I wasn't even sure if we'd like the meal anyway.
I mean, why would I ever guess that cashews would taste like cheese?!
This is about the time I realized that I was making it harder than it needed to be.
Instead of trying to REPLACE ingredients with allergy-friendly ingredients, I needed to find recipes that were allergy-friendly in the first place.
That meant changing some of the places I went to find recipes, and it also meant making meals that could be adapted to each person's allergies at the table.
After all, my daughter LOVES cheese, my son LOVES bread, and I can eat gluten and dairy without any issues.
If you cook for multiple diets and allergies, I encourage you to create a list of 3 meals that have a common "core" and can be tailored to fit each person's dietary requirements.
A good example of this is a baked potato bar. Each person can top the potato as they like - avoiding the foods they can't have - and no one has any upset tummies later on!
By the way, I have to confess that this "core" meal idea isn't entirely my own. I struggled big time when I first found out about my kids' sensitivities. I knew I wasn't the first to pave the road in this area, so I reached out to someone who has "been there, done that" when it comes to clean eating and food allergies.
Being able to do this - to talk to someone who shared the same healthy living lifestyle about how THEY do things - was PRICELESS. And it was a complete game-changer for me.
