Good morning sweet pea! Better a little late than a dollar short, right? I mean, I might be both of those things. I'm not sure what's happening in your world, but I'm going to suspect that you might be needing some delicious holiday recipes! You know, your guests will be happy with whatever you choose, but there are some of our favorites! We are going to do these marinated porkchops at my house. They are so good. Marinating in the fridge right now! Plus then we plan on some delicious Mashed Potatoes, Sauteed Spinach and Asparagus (I know that is a lot of green, but that falls within the diets of the people enjoying the meal so....). Don't think I won't also whip up some gravy because I need it for the pork chops and the mashed potatoes! Gravy. Yum! There are about a million desserts over at Loaves and Dishes, i hope you'll go find one that suits your mom and enjoy! ___________________________________ HOT COOKING TIP OF THE WEEK I know its not really apple time, but do we need a special apple time? No, we really don't. Today I want to talk about the kinds of apples and why recipes call for what they call for. Today, we will be having some apple chutney with the porkchops. I used Ina Gartens recipe (you can usually trust her recipes, although, I'm careful with the amount of salt she says to add to almost anything). The Chutney calls for 6 Granny Smith apples. My friend who is eating with me asked if we could please use red delicious instead because he doesn't like granny smiths. Here's the thing, the chutney has to be cooked for about a hour. Many of us don't like the taste of a raw granny smith apple. It's very tart and as my friend says, "it bites back". For straight up eating, you will do much better with a red or yellow delicious or any of the sweeter softer apples out there. Have you ever cooked those apples for any length of time? They break down and turn to mush. So, they aren't optimal for things like apple pies and chutneys. Granny Smith Apples retain a tiny bit of their tartness but hold up very well to the long cooking times. There are a few other apples that do as well, but I specifically wanted to discuss Granny Smiths since they sometimes get a bad wrap over their strong taste. So, yes, if a recipe calls for Granny Smith apples then please use Granny Smith. You can substitute maybe one or so apples with a sweeter variety if you really must. Something like a sweet crisp apple will do.
