Here's today's Tip/Kitchen Hack: Lately, I've been diving into the world of make-it-yourself DIY dinners, where I creatively combine the leftovers from my fridge with a specific cuisine. Last night, my family and I had a blast with a Mexican-inspired feast, and I couldn't wait to share my tips on how to build a mouthwatering Mexican dinner table at home. But remember, you can follow these guidelines and adapt them to any cuisine you like! Here's what we did: - Protein Fillings: To cater to everyone's preferences, I prepared a variety of protein fillings. I had chicken fajita, crispy fried eggplant slices, and potato pops (you can use frozen or make them fresh!). Keeping them mildly spiced allowed for versatile pairings. And of course, I couldn't forget the classic refried beans as a scrumptious option.
- Dips and Spreads: I whipped up my creamy nacho cheese sauce and roasted tomato salsa. With a ripe avocado in the fridge, I quickly prepared fresh guacamole. To complete the flavour palette, I included some store-bought sour cream as well.
- Mexican Rice: I couldn't resist making a batch of my easy-peasy Instant Pot Mexican rice. This versatile rice can be enjoyed on its own or paired with any side you desire. It's perfect for assembling rice bowls or creating quick and tasty burritos.
- Fresh Veggies: Crisp lettuce, sweet corn kernels, and a medley of chopped peppers and onions made for vibrant toppings. For a change in texture, you can also sautรฉ the peppers and onions. These delightful additions provide bursts of flavour and texture, enhancing the overall experience.
And there you have it! With an assortment of tortillas, taco shells, and/or nachos, you can create an incredibly easy and enjoyable Mexican feast. This setup is perfect for both intimate gatherings and larger family get-togethers, allowing everyone to customise their own delicious creations.
