It's the weekend!!
I don't know about where you live, but here in Pittsburgh, it's officially fall. It was in the 80s a week ago, and now it's in the 60s and I'm all about it. Bring on sweater weather and soup season! ...speaking of which, I thought I'd share my 3 FAVORITE soup recipes in this email, along with my recent recipes from the past week.
Bookmark these recipes for the upcoming week:
Think: minestrone soup, but with chicken sausage. It's made in one pot in under 25 minutes, and somehow manages to be healthy and hearty at the same time.
Who doesn't love a one pan meal?! This recipe is essentially deconstructed enchiladas: beef, green chiles, enchilada sauce, and plenty of cheese make this an easy family favorite.
I've been loving yogurt for breakfast lately, mostly because it's easy to customize. So, I figured I'd share 5 of my go-to ways to make a yogurt bowl so you're not eating the same thing every day!
Plus 3 of my favorite soups!
Instant Pot White Chicken Chili
Dairy-free white chicken chili is where it's at! It's one of the most popular soup recipes on my site for a reason. Use dairy-free cream cheese in this creamy chili recipe with chicken, corn, green chiles, and cilantro. SO good!
Spicy Sausage and Potato Soup
Spicy sausage, potatoes, kale, and smoked paprika make this an easy favorite. Plus, it's paleo/whole30, too!
Does stew count as soup? I hope so, because this chicken stew deserves to be featured. Made in the slow cooker so it's pretty hands off, it's made with chicken thighs, carrots and potatoes and I guarantee you'll love it.
If you make any of these recipes, be sure to leave a comment and star rating on the blog and let me know what you think -- I love hearing from you!
