Nothing changed the way I cook and bake quite as much as the very inexpensive kitchen scale I bought five or six years ago. Once I had committed to memory that a cup of AP flour weighs 125 grams and a cup of granulated sugar weighs 200 grams, I was off and running. I haven't dirtied a measuring cup (or my counters) with flour in years. The same goes for olive and vegetable oils. My most frequently used cookbooks are all scrawled with weight measurements over top of the volume ones. And of course, all elements of my morning coffee brewing experience get gram weights too. The transition to using a scale takes a little getting used to, but once you get the hang of it, I can almost promise you that you will be a much happier cook and baker (especially if you hate doing dishes).
