Apple Cider Vinaigrette For All of Your Fall Salad Needs + Holly's Challah & More Rosh Hashanah Recipes

Hi Friends,

Remember last week when I mentioned how easy it is this time of year to rush headlong into fall? Something about being too quick to load our salads with apples and pears?

Welllllll, what can I say? It's officially fall now, and if you've found yourself engaging in all the fall cooking activities, I can't blame you. Today, I have a new apple cider vinaigrette recipe to share with you and a fall salad loaded with sliced apples to boot.

The dressing is simple: a mix of honey, apple cider vinegar, fresh lemon juice, salt, and extra-virgin olive oil. And it's sharp, too: roughly 1/3 cup acid to 1/2 cup olive oil.

The bite, however, is tempered by honey, the amount of which you can adjust to taste. I find two tablespoons to be about right, and if this sounds like a lot to you, know that it sounded like a lot to me, too. But the vinaigrette, I assure you, does not taste too sweet — it tastes balanced and bright, a perfect dressing for all of my fall salad needs. I hope you'll agree.
