I Never Thought I'd Love These Grills and I Was So Wrong |
Pellet grills always felt a little like cheating to me. The promise of smoky barbecue but without the need to feed a fire or even light a charcoal chimney? It sounded like black magic and I didn't care for it. But I must say, after testing a garage full of pellet grills for our most recent review, I'm a (looks at the floor with shame) convert. I made a pork shoulder while leaving to go to a music festival for two hours. I got some of these grills up over 600 degrees in little more than 10 minutes. I took my food off, pushed the shutdown button, walked inside and didn't have to worry about the grill until the next morning. For those of you unfamiliar with them, pellet grills use compressed wood pellets instead of charcoal or wood chunks as fuel. They have a fan to circulate hot air and a thermostat built in, so they maintain very even temperatures automatically. They're as easy to use as an oven. I've tried a lot of different types of outdoor cooking equipment in the last year. Some of it was good, some of it was not, but very rarely was any of it terribly surprising. With these pellet grills though, I didn't expect the quality of food I ended up getting. It was good enough to fool the neighbors into thinking it came off a wood smoker. If you like the idea of wood-fired cooking but think it takes too much time, the pellet grill might be the answer you're looking for.
