August 2022 Savor Summer Eating While it Lasts | | I love everything about summer produce. Have you ever taken a juicy bite out of a plump, perfectly ripe peach or savored the flavor of a cherry tomato plucked right off the vine and thought how perfectly aligned nature-grown fruits and vegetables are with the season? These cooling and hydrating foods are exactly what our bodies need, and their intense, close-your-eyes-it's-so-good tastes lift the spirit during August's hot, energy-zapping temps. And it still blows me away how summer faves like watermelon, tomatoes, and guava help naturally protect skin from damaging sunburn because they contain the powerful plant compound, lycopene. Yet another seasonal perk: summer produce is as suited to recipes that require no cooking at all as it is to the backyard, beach, or campground grill—perfect for beating the heat. My plan is to enjoy this final month of the spectacular plant-forward season by digging in to summer produce and indulging in all its healthful, satisfying, and delicious offerings. Join me! | | Top Tips to Savor Summer Eating Before It's Gone - Serve Salad! One of the best beat-the-heat meals, salads are cool to prep and cooling to eat. Change up your go-to salad and try something different, like Strawberry Salad with Brazil Nuts, which appears in my new book, California Vegan.
- Get Grilling. Seasonal outdoor grilling takes flavor to another level. Traditional veggie burgers, kabobs, corn on the cob, and grilled fruit for dessert are healthy, light, and delicious ways to cook up any meal.
- Eat Your Garden. If your garden—or farmers market—is bursting with tomatoes, zucchini, cucumbers, and herbs like mine is, pluck what's ripe and create a meal, whether salad, side, appetizer, or main. My Classic Bruschetta is a favorite.
- Go Outside. Whether your backyard, campground, or local park, set your sights on a picnic to relish long days and seasonal plant-forward fare.
- Preserve It! The goodness of summer produce doesn't have to end if you can your bounty to enjoy all year long. I grew up canning produce in Washington and the result is not only a treat in winter, it's an excellent practice in sustainability, letting nothing go to waste.
