One of my very favorite dishes on earth is homemade enchiladas with red sauce. Often times I don't have the time or desire to roll individual enchiladas though, so I take the easy road and make Beef and Veggie Enchilada Skillet, aka Lazy Girl Enchiladas.
Yes! Simply add all the ingredients, including chopped corn tortillas, in a big skillet then saute and simmer until warmed through. Sprinkle with plenty of cheese then broil until melted. All the cozy, satisfying flavors of enchiladas in a fraction of the time.
You know what we call that? An UPGRADE!
