Well we made it to Wednesday. How's your week treating you? I'm hoping it's got you feeling the best possible way.
The exciting news over here is that the kitchen renovation is finally done!
Done. Over with. Finito.
It took 4 months, but we are over the moon excited about it!

We're knee deep in the second project now, which is replacing all the windows and re-siding the exterior, so it'll still be a month or two until the house is back at peace. But one project is done and I can find a sense of relief in that.
With all the renos AND trying to work at the same time, I just cannot seem to muster the energy to make an elaborate meal in my new kitchen.
But that's ok. I feel like we're all in the same boat lately--just too tired to cook and too tired to even think straight. That's why today I bring you a tried and true recipe for the days you're just too tired to function :
It's a literal dump and go dish, with all the shortcuts we love from the grocery store. Ready in under 4 hours, you have an easy protein perfect for tacos, nachos, burrito bowls, or a spicy addition to a salad.
Make this dish when you just CANNOT adult anymore and need an assist to get you over the finish line this week.
