Well, well, well, it seems as though summer has finally decided to summer (at least here in Minnesota). We're here, and we are ready for it.
And there's a lot of summer to enjoy here this week:
A brand new recipe that involves a lot of crunch and a lot of tang
Six well-loved recipes that really let the season's produce shine
A little peek into your kitchen by way of Instagram
A peach cobbler recipe that is one of the top-rated, top-loved, most-made recipes on all of Pinch of Yum
And can we talk real quick about that new crunchy tangy recipe? Woooo boy. We are all about lettuce wraps anytime, anywhere, but when you bring a little lime drench to the party, it's a true celebration. (Don't know what a lime drench is? You will soon, and you will be very happy about it.)
Crumbled-crisp chicken and garlicky, gingery sautéed veg get stuffed into crisp butter lettuce leaves, showered in a flavor-packed lime drench, and crowned with spicy mayo (optional, but not optional).
Scoop up the freshest, greenest asparagus you can, grab those basil leaves by the handful, and make yourself this creamy, light pasta. Oh my, the summery green of it all.
Big bold flavors, only 5 ingredients! Scoop them up onto some crusty bread, on top of a salad or grilled chicken, or straight into your mouth and live your best summer days.
An absolute rainbow of power veggies plus a zingy Thai-inspired sesame garlic dressing. And please sprinkle a handful of chopped chili lime cashews on top.
Grilling or roasting some veg this week? Try this sauce pal to top! Full of plum tomatoes, roasted red peppers, almonds, and a lemon/parsley/garlic/salt punch.
A no-fuss, swoon-worthy treat! Juicy, jammy, fresh peaches baked under a cookie-ish cobbler top, dusted with the broiled crunch of turbinado sugar. *faints* This Peach Cobbler is it.
Hoping your week is filled with lots of crunch, lots of color, and a whole lot of peach cobbler, because SUMMER.
