| Good advice: romance yourself with a giant cookie. But you could also share this one if you're feeling generous. This week's recipe is a gentle riff on my go-to vegan and grain-free cookie formula. It's still super delicious and gooey and fantastic.
I went with a deep chocolate flavour that's enhanced by vanilla and a smidge of ground coffee in the dough. Peanut butter plays its irresistible part and we really do load this thing up with chopped chocolate.
The best thing about this recipe is that it's so easy to make! The worst thing? Waiting 30 minutes for it to cool. Hope your week is going well and that you're taking care.
