Our not-so-traditional menu for Thanksgiving at the beach

Hey reader,

Growing up my family always had the same Thanksgiving dinner. Whether we were at home in Texas or visiting family in Chicago, Thanksgiving dinner was ALWAYS the same:

  • Turkey
  • Stuffing
  • Sweet Potato Casserole
  • Corn Casserole
  • Green Bean Casserole
  • Mashed Potatoes
  • Gravy
  • Breaded Broccoli & Cauliflower Bake
  • Cranberry Sauce
  • Dinner Rolls

As a kid, I never second guessed what we were having. What you made for Thanksgiving didn't change. It was an unwritten rule. You ate the same thing you had last year - duh!

But that all changed when I got married.

My husband doesn't like turkey. Or stuffing, or casseroles, or mashed potatoes, or cranberry sauce, or gravy.

Out of everything I knew and loved about Thanksgiving, he only liked rolls.

In our second year of marriage, he compromised on the green beans, so long as they were plain. 🙄

He's overcome a lot of his pickiness since then, but it's still not one of his favorite holidays. I usually make a thin version of Thanksgiving dinner for us and make sure there are some leftovers on hand for him, just in case.

Since we'll be in Florida this year for Thanksgiving, I wanted to balance NOT having to buy "all the things" we usually do with something that everyone could enjoy.

So this year I gave everyone a yellow sticky and asked them to write down three things they'd like to see on the dinner table. This lets me make dishes that everyone is actually looking forward to eating, and it keeps our mobile food locker on the lighter side.

Curious what they wrote? Here you go!

(Can you tell who doesn't like Thanksgiving? 😂)

The funny thing is, even if I made ALL of these things, we'd easily eat the leftovers within a day or two. (True story, I made FIVE POUNDS of mashed potatoes for the kids and they were gone in 2 days!)

So what will our menu be? Everything but pecan pie. :)

If I can make a traditional Thanksgiving dinner in an hour (watch it here!), then I can easily make everyone's favorites and turn this unusual holiday into one of the best we've ever had.

ALL my best ♥,
