I'm going to use this a lot on paternity leave This is the last newsletter I'm going to put together before I go on paternity leave with my three-month old daughter. I'm very excited about spending a few months focused on her. "Focused on her" are important words because, as my wife pointed out to me yesterday as her leave was coming to a close, this ain't a freakin' vacation. I do the vast majority of cooking in our house and I've been thinking about what I can do to keep that up with a fussy three-month old who has an unpredictable sleep schedule and can't exactly hang in the baby carrier while I'm sautéing over a lit stove. I think I'm going to find my answer in my sous vide circulator. I've been cooking sous vide on and off since it first got cool for home cooks in the 2010s and my only real knock on it was the thing that's going to make it so advantageous to me now: I never felt like I was actually doing very much work. I found prep work for sous vide to be generally fast and minimal, even compared to a set-it-and-forget-it slow cooker recipe—just what I need if I only have 35 minutes in the middle of the afternoon to set everything up for dinner. It also holds food steady and allows you to ignore it for some time after it's done cooking; a definite plus if I need to do an impromptu feeding when it's time to take the asparagus out of the water bath. Because it requires such a specific and flashy piece of equipment, sous vide cooking can seem a little hoity toity, but I'll take that trade-off if it means I can still get dinner on the table.
