How to Melt Chocolate - 2 EASY methods!

Here's today's Tip/Kitchen Hack:

Nov and Dec are holiday months for me with Diwali, Thanksgiving, Christmas and New Years. If you're like me, practicing your dessert game, here's a trick that will come in handy. Today I'm sharing my fail-proof methods to melt chocolate - the right way!

  • Microwave Method - the quick and easy way - 
    • All you have to do is place chopped chocolate in a microwave safe bowl. Microwave for 45 seconds at 100% power (or the default setting). 
    • Remove the bowl, use a spatula to lightly stir. Place the bowl back in the microwave for 30 seconds, remove and stir. 
    • Continue to microwave in 30 second intervals, stirring frequently, till the chocolate looks like it's 85% melted with a few bits and bobs here and there. Those will continue to melt in the residual heat.
  • Double Boiler Method - aka the stovetop method - 
    • Place chopped chocolate in a heatproof bowl (make sure the bowl you use fits over the saucepan you use). 
    • Heat water in a saucepan and allow it to simmer on low flame. Place the bowl of chocolate in the saucepan, ensuring the water does not touch the sauce pan. 
    • Remember, the heat from the steam melts the chocolate, not the simmering water. Stir continuously using a silicone spatula until the chocolate has fully melted. 
    • Alternatively, you can also use a double boiler in place of a saucepan.

Here are a few basic rules to keep in mind when melting chocolate:

  • Keep moisture away! When chocolate comes in contact with water, it seizes. This is the most common mistake when it comes to melting chocolate. Ensure all your utensils are dry and free from moisture. 
  • Chocolate is heat sensitive and also varies with type of chocolate. White chocolate melts faster than dark or milk chocolate, so pay close attention to it. The time it takes to melt fully also depends on the capacity of your microwave and the quality of the chocolate you're using. It's best to always keep an eye on it, do a trial and see what works best for you.
