Keep your Thanksgiving Full of Turkey and Free from Foodborne Illness

Next week, Americans will enjoy the tastiest American holiday. While the COVID-19 pandemic is still top-of-mind, it's also important to keep family and friends safe from foodborne illness this Thanksgiving.

FSIS has resources for consumers on a variety of Thanksgiving food safety topics, including buying fresh vs. frozen turkey, different methods to thawing, fully cooking the turkey to a safe internal temperature of 165 degrees Fahrenheit, handling leftovers, and more. 

Consumers with questions about food safety can call the USDA Meat and Poultry Hotline at 1-888-MPHotline (1-888-674-6854), email MPHotline@usda.gov, or chat live at https://ask.usda.gov/ from 10:00 a.m. to 6:00 p.m. Eastern Time, Monday through Friday, in English or Spanish. The Meat and Poultry Hotline is also open on Thanksgiving Day from 8:00 a.m. to 2:00 p.m. Eastern Time.

FSIS Posts After-Action Review for Listeria monocytogenes (Lm) Outbreak Linked to Pork Patty Products

FSIS has posted on its website an after-action review report for the investigation of a 2018 outbreak of Listeria monocytogenes (Lm) illnesses associated with pork patty products. Public health officials in multiple states, the Centers for Disease Control and Prevention (CDC), and FSIS investigated an outbreak of four Lm illnesses linked to pork patty products produced at an FSIS-regulated establishment. Product and environmental samples helped identify the source of the outbreak and indicated Lm harborage at the regulated establishment, highlighting the value of both routine and investigative sampling. This investigation also highlighted the value of whole genome sequencing to determine relatedness between bacterial isolates and help public health partners detect and solve the outbreak.

The purpose of FSIS outbreak investigation after action review reports is to share lessons learned with industry and public health partners to help prevent illness and improve response.

FSIS to Post Next Set of Establishment-Specific Datasets on Raw Pork Products

FSIS is preparing to publish the next set of establishment-specific data. Prior to publishing the dataset, FSIS is making a sample dataset and data documentation available for comment. The next sample dataset and corresponding data documentation are for Raw Pork Products, which include Raw Comminuted Pork and Raw Pork Cuts. This dataset will contain similar information as other establishment-specific datasets, such as pathogen test result and isolate characterization.   

Please visit Regulations.gov and follow the online instructions at that site for submitting comments to Docket FSIS-2014-0032 for this sample dataset and data documentation by December 31, 2021. The sample dataset and data documentation will also be posted on the FSIS website under "Raw Pork Products Sampling" on the Laboratory Sampling Data page.

To remain consistent with the other establishment-specific datasets, the first datasets will be an archive and current file. The archive file will contain fiscal year (FY) 2020 data; the current file will contain FY2021 data. Both the archive and current files are planned to publish on January 7, 2022. Subsequent postings will follow the regular posting schedule for establishment-specific datasets. New datasets are released the first Friday of the next quarter with a quarter lag, meaning data for FY2021 Q4 are planned to be released on January 7, 2022, data for FY2022 Q1 are planned to be released on April 1, 2022, and so forth. Existing datasets will be updated quarterly. Additional details can be found in the FSIS Establishment-Specific Data Release Strategic Plan.

FSIS to Post Individual Category Status and Aggregate Results for Poultry Carcasses, Chicken Parts, and Comminuted Poultry Tested for Salmonella

On November 22, 2021, FSIS will update the individual establishment Salmonella performance standard category information for raw poultry carcasses, raw chicken parts, and comminuted poultry products on the Salmonella Verification Testing Program Monthly Posting page. Additionally, FSIS will post the aggregate sampling results showing the number of establishments in categories 1, 2, or 3 for establishments producing young chicken or turkey carcasses, raw chicken parts, or not ready-to-eat (NRTE) comminuted poultry products at the location linked above.
