How are we feeling the day after Halloween? Good I hope!
My house is a mess in the aftermath and I'm choosing to chit chat with pals (that's you!) instead of doing anything about it.
But I do have ONE productive thing I want to share with you, and that's this recipe for Thanksgiving.
It's my shortcut version of Gordon Ramsay's Caramelized Cranberry Apple Sauce!
Ok I LOVE Chef Ramsay and don't even get me started on my "Kitchen Nightmares" obsession! He's bold, funny, and has the mouth of a sailor, but he is actually a great chef with some fabulous recipes.
He came up with this GORGEOUS cranberry sauce that involves caramelizing sugar, infusing it with star anise, cardamom, and then adding some fresh cranberries, apples, orange and Port wine. Divine.
I love that idea, but what I don't love is caramelizing sugar--especially when I'm in the middle of making 486 other things for Thanksgiving. I don't need to have a pool of burnt sugar (because of course it'll burn on me) stuck to the bottom of the pot.
The solution? Maple syrup!
I mean, what's maple syrup except boiled and caramelized tree sugar?
So that's what I used. I simmer some spices with the syrup, add in some crans and apples and finish with fresh orange and apple cider (instead of Port). The result is the most lovely, aromatic side dish you've ever put your tastebuds on. And it's incredibly quick.
It's a majorly impressive side, with very minimal effort.
I'll leave the recipe below. I hope you get the chance to make it and I hope you fall in love! FYI, it is a chunky sauce, but that's nothing a spin in the blender can't fix!
