The one technique you need to learn is to make pâte à choux, or choux pastry. Although the name sounds fancy, I promise it's easy and even fun to make. I have all the tips you'll ever need to get it right on your very first try I even teach a class on it!  Once you've got this key technique down, the possibilities are endless!
