Here's today's Tip/Kitchen Hack: Today I'm going to give you a very simple tip - refrigeration. While it might sound unusual, storing these foods in the refrigerator can easily increase their shelf life by weeks or even months! Read on to know more: - Masalas: Masalas or ground spice mixes should be stored in the refrigerator or even the freezer. A simple trick I'd recommend is to store small quantities in a masala dabba and replenish it as it gets over. Refrigerating the masalas not only prevents spoilage but also preserves the freshness and aroma as well. Always store in an airtight container. This is also appropriate for store bought masalas you use once in a while like Pav Bhaji Masala or Chole Masala.
- Flours: Flours such as whole wheat, maida, nut flours, sooji etc., last longer when frozen or refrigerated in airtight containers. This tip is especially useful if you live in an area prone to pests and worms.
- Nuts and Dry Fruits: Just like flours, nuts and dry fruits also require refrigeration to preserve freshness and prevent damage from pests and worms. Nuts and dry fruits left at room temperature grow rancid quicker and encourage growth of insects. Sauces and
- Condiments: Sauces and condiments like ketchup, sriracha, soy sauce, oyster sauce etc., can be stored at room temperature as they have a high-acid or high-salt concentration that fends off bacteria. However, the cool temperatures of a refrigerator helps prevent mould and preserve it's flavour and freshness. This can also easily increase their shelf life by 2-3 months.
- Fruit Preserves and Jams: The same logic applies here too. The high sugar content in fruit preserves will fend off bacteria and mould growth, but refrigeration helps keep the freshness intact! It's also mentioned on the bottle label that refrigeration is a must but somehow common practice is to ignore it.
- Ginger, lemon and limes: While these foods stay perfectly good at room temperature with no worry of spoilage, the problem lies in loss of moisture. When stored at room temperature, gingers and limes lose moisture more quickly than when stored in a fridge. Refrigerate these and you'll have fresh produce for more than 3-4 weeks!
