Hello Dear One, How are you today? Me, just fine EXCEPT I need some nose plugs. I am not really sure what happened, but at 4am all was well and my daughter's Golden Retriever mix dog needed to go out to the bathroom. The dog ran out into the dark and didn't come immediately back (she does this sometimes, opting to scout around the yard until the rest of us get up), so I went back to bed. At about 5am, I heard her barking at something near the barn but didn't worry about it. By 5:30, the most horrendous smell had filled the house. When I opened the front door, there stood Lyric VERY muddy and wet. My house is FILLED with the aroma of skunk. It is a smell so loud that I can smell, hear and taste it. Amazingly, the dog does not smell like skunk. How did that happen? I am guessing that she chased the skunk towards the house and it got under the house and sprayed? No idea. I've got scented candles burning, the doors and windows open and my essential oil vaporizer running. Those are barely doing a job of covering the smell. Oh boy. But, you didn't come here looking for skunky stories, did you? Nope. At least you can laugh at my predicament. I'm laughing about it. What else can you do? Anyway, now you know why I didn't write this newsletter to you at 5am this morning. So.... ON WITH THE FOOD! This past week at Loaves and Dishes, as promised, I got "Chili Relleno Casserole" out the door. Its a great and easy dish that works equally well at room temp or hot out of the oven. Its' GREAT for packing into tortillas, freezing and then grabbing as a quick breakfast on the run! You'll want to top that casserole with my Chili Relleno Sauce, it's WAY better than anything store bought and it couldn't be easier either. Then, for those of you itching to use your pressure cooker (an Instant Pot works too), I've got some Beef Bone Broth in the Pressure Cooker. So easy and AFFORDABLE! Old, I'll tell you that. It involves patience and anyone who knows me understands how critically short I am of that commodity. Maybe you are too? However, your cooking (oven and stovetop) will go much more smoothly if you allow your oven and/or pans to come to temperature before adding the ingredients. Have you ever set a pan on the stove, started cutting chicken into bite size pieces and throw it into the pan as the pan heats up and as you cut? Me too. Know what you end up with at the end? Chicken that isn't evenly cooked. Some of it is steamed, some of it is overcooked and some of it is undercooked (yikes!). One of the secrets over perfect every time meals is allowing the pan or the oven to come to temperature before cooking. So, set your stovetop on the temperature called for in the recipe, add oil or whatever is required to cook the food and then wait. It will take some time. Allow your pan to thoroughly come fully to temperature before adding your food. (and do not overcrowd the pan, regardless of what you are cooking - unless you are wilting spinach - then put as much as you want and you will still end up with 2 tbs when you are done. hahaha). It goes the same for your oven. Set the temperature of the oven to the cooking temp and then wait for the oven to fully preheat. You may want to give it an extra 5 minutes after the altering beep so that when you open the door to place your item in the oven, you don't lose all of the heat.
