Cheap + Fast + Healthy πŸ₯•

Fall is nearly here, and I bet you're seeing root vegetables pop up at your local farmers market. They're both affordable and abundant - especially in the autumn and winter months.

 

Carrots are always a favorite - they're a thrifty option and also one of the most nutrient-dense vegetables you can choose. One of my favorite ways to cook them is in this Carrot Leek Soup which comes together in about 40 minutes.

 

Here's why you should give it a try:

  • Carrots are super affordable. Organic carrots ring in at about $1/pound, which makes them one of the cheapest options for fresh, organic vegetables.  And when you buy in bulk (5-10 lbs), they often cost even less. 
  • Carrots nutrient-dense.  They're rich in beta carotene, a precursor to vitamin A that helps support eye health as well as the reproductive and immune systems.  They also contain a good dose of fiber as well as potassium and vitamin K.
  • It's rich in healthy fats.  Your body needs a good dose of healthy fat in order to best absorb the antioxidant in carrots (and many other vegetables), and you'll add just the right amount of ghee (or olive oil) to this recipe.
  • It's delicious.  Sweet carrots find balance in a savory broth spiked with leeks and fresh thyme.
