The most popular salad on What’s Gaby Cooking!



Hi Guys!

Not only is this one of my favorite recipes of ALL TIMES, but it's also one of the most popular recipes on WGC.

If you've ever had Elote, Mexican style corn on the cob slathered in mayo, chili powder, and lime juice, you'll know it's basically the best thing in the world, but the only thing that's missing is there's no avocado anywhere to be found. Well… PROBLEM SOLVED.

Just imagine quinoa salad meets guacamole with corn and cheese. I mean, what more could you ask for?

And if you are worried about corn not being in season, fear not! You can make this recipe year-round. If corn isn't in season, or you can't find it, frozen sweet corn is a strong replacement.

Just be aware, this salad goes quickly in our house, so you might want to make a double batch. This will avoid any incidents of hiding it in the back of your fridge, so your friends or family don't see it.

⭐️ Bonus Tip: Mayo can be substituted for avocado in almost any dish. I've subbed it to make my vegan green goddess dressing, avocado aioli, and deviled eggs.
