Bhuna Masala is the backbone of Indian cooking.
It's a simple base of ginger, garlic, onions and tomato that's cooked together till thick and gravy-like. Throw in some paneer and peas and you have matar paneer; some chicken and you have chicken curry - super versatile!
I'd recommend making a big batch of this and freezing it. It's so handy to have when you're in a rush and want to get something on the table super quick.
