Summer squash abounds! Make healthy, delectable Lebanese recipes with zucchini, koosa, and yellow squash.
"Koosa" (also known as: coosa, kousa, kusa, you name it!) refers to light green summer squash-- we use zucchini and yellow squash too, just as delicious. Hollow them out, stuff with vegan or meat filling, and poach in tomato or yogurt broth.
