Meal prep details: What we made BEFORE we left for 8 weeks

I've preached for years that one of THE BEST ways to keep your grocery budget under control is to eat the food you already have. With that in mind, we wanted to make a few things for the Epic Road Trip before we left home, so we shopped for less while traveling. 

In the process, I wanted to empty out a few containers that had "just a little bit" left. The recipes I made were chosen specifically for being…

  1. Easy
  2. Road-trip friendly
  3. Not requiring refrigeration
  4. Foods that we typically eat while traveling anyway


DIY Trail Mix: 1 cup of all the things we love about trail mix. We used: dried apricots, dried bananas, cashews, almonds, walnuts, cranberries, raisins, white chocolate chips. Finished off a bag of pecans and dark chocolate chips! Here's an actual recipe if you want need some tracks to run on to make your own. 

Cinnamon Almond Coconut Granola: I used my "kitchen sink" granola recipe, which is 4 cups oats + 2 cups mix-ins + ½ cup oil + ½ cup sweetener + ½ tsp salt in the oven at 300F for 60 min. (It's similar to this Kitchen Sink granola bar recipe.)

I actually delegated this to my 13 year old so I could do something else, and he had 3 half-sheet baking pans going at the same time, rotating each every 20 minutes!

Homemade Taco Seasoning: I had already re-used a medium-sized spice container for a previous batch of this, so I simply made more. I believe I ended up making a 6x batch of my recipe.

Homemade Blackened Seasoning: While making the taco seasoning, I finished off another medium-sized spice container of chili powder. I used lemon essential oil to rub off the sticky residue from the label and WITHOUT CLEANING I tossed in some blackened seasoning from Ava Jane's Kitchen and then filled it to the top with my recipe (subbing regular paprika for smoked, since I was out).

Ava Jane's Kitchen has that awesome salt for only a penny!


Homemade Greek Seasoning: At this point, my basil container was running low, so I emptied it into a glass, reused the container for my recipe and SURPRISE! I had just enough basil to make enough to fill the container. 🙌

Homemade Ranch Seasoning: I ran out of spice jars, so I re-used an old jelly jar and made a half batch of this recipe and this recipe - because I didn't have enough spices to make a full batch of each, LOL!

PS - If you haven't been keeping up, my family and I are taking one year off from typical life. It's called a Skip Year and we'll be traveling, homeschooling, making memories, learning life skills and pretty much NOT be at home.
