Off to the markets we go! I love exploring farmer's markets. They're pure inspiration to me: brimming with beautiful, in-season, fresh produce. My favorite thing is to find something unique that I haven't tried before—a new-to-me heirloom tomato variety, or super-fresh greens or herbs I know will soon disappear from the stalls. Honey from local wildflowers, or jams made with freshly picked berries! My mind runs wild with all the things I could make with the treasures I find at markets. Summer is prime market season: with harvests are at their peak, it's the best time of year to visit. Markets are also just a really nice place to wander around even if you don't buy a thing! This week I'm focusing on recipes that make the most of market-fresh ingredients. These dishes aren't complicated but fresh, quality ingredients really elevate them. These recipes all use in-season produce and are so full of flavor without being too heavy. Now is the time to enjoy them! Soupe au Pistou (French Summer Vegetable Soup) Soupe au Pistou is a classic French soup that lets the flavors of summer herbs and vegetables really shine through. This light soup makes great use of your local CSA basket or garden haul. What makes this soup special is the "pistou". Pistou is the French answer to pesto. While the recipe for pistou can vary depending on where you are in France, the big difference between it and pesto are the inclusion of a fresh tomato and the absence of nuts. This is the perfect summer soup—light enough to enjoy on a hot late-summer day, hearty enough to act as a meal. I know you're going to love it as much as I do! It's a riot of flavors and textures, yet it's so simple to make! | | Hazelnut & Grilled Zucchini Salad | | | Zucchini has a tendency to become rather prolific come August so it never hurts to have a few extra zucchini recipes up your sleeve, such as this Hazelnut and Grilled Zucchini Salad! Combining an irresistible combination of textures and flavors, this simple salad is great with any grilled meat, fish, or seafood, or as part of a picnic spread. | | Sweet Corn Chowder with Lemony Pesto | | | Sweet corn might very well be my favorite summer produce (don't tell tomatoes! 🙊) and this Sweet Corn Chowder with Lemony Pesto is one of my favorite dishes to make with summer corn. Just like the recipes above, it's easy to make but has a wonderfully complex flavor profile.
