Whenever we travel, my husband and I love to munch on while driving. Many times it is hard to find healthy snacks for munching. So I started preparing this travel mix nuts to take with us. I will pack few small ziploc bags so I don't need to remove whole pack and it also helps in portion control. My husband prefers roasted nuts, for me it doesn't matter. He likes a bit of salt in it. We like almond, walnuts and cashews but you can add any nuts (pistachio, Brazil nuts, macadamia nuts, etc), seeds (sunflower seeds, pumpkin seeds, etc) and dry fruits (raisins, figs, apricot, cranberry, etc) of your choice. This is ready in just few minutes.

Preparation Time: 10-15 minutes

Cooking Time: 6-7 minutes in oven

Ingredients:

Almonds
Pistachio
Walnuts
Sanchal (black salt) powder

Procedure:

1. Sprinkle little water on each nuts. Add pinch of sanchal (black salt) or regular salt and mix with the nuts. Let nuts dry at room temperature or under direct sunlight.

2. Spread these nuts on a baking tray. Bake at 350F for 7-8 minutes, mixing it once or twice. Make sure they don't burn. When you see nuts slightly changed the colour, turn off the heat. Remove from the oven. Let it completely cool and then store in a clean dry container.

If you are adding dry fruits, then add after nuts cool down completely. If you are adding seeds, then roast seeds separately. You can also roast these nuts in ghee and add mango powder, cumin and salt. You can fill these travel mix in small ziploc bags for travelling. These roasted nuts has hint of salt. Absolutely delicious!
