Easy Lemon Cream Pie
I set out this week to make some no-churn lemon ice cream, but at the last minute, I was like, "I really don't want to wait for it to freeze…" so I made it into a pie instead. The filling for this super easy Lemon Cream Pie is the same simple combo as no-churn ice cream: sweetened condensed milk + heavy whipping cream + whatever flavors or add-ins you want. Black Bean and Roasted Salsa Soup
I'll just admit it. I love salsa so much that sometimes I wish I could eat it with a spoon as if it were soup. So that's basically what I did. I made a homemade salsa with roasted vegetables, combined it with black beans to make the soup more filling, and added some fresh cilantro and lime to freshen things up.
