Good Morning Dear Friend. How are you? Is your summer winding down and have you enjoyed the warm sun on your beautiful face? I hope you've taken a few minutes to head out doors and enjoy the fresh air, the blue sky and all the wonders that surround you. Life is so sweet when we take time to notice, isn't it? Do you have plans for the weekend? Me? I'll have the smallest grandbaby on Saturday night, I'm considering taking him to a concert in the park so that he can run and play and maybe I can hear some nice music while I chase him. This thing will happen right at dinner time so I believe I'll pack us a picnic. It will have to be something that can be carried in a back pack, because I have to be able to strap it on and run as best a grandma can. It's time for that final hurrah of the summer holiday: Labor Day. You'll be needing some good picnic ideas too. Of course, there's the southern picnic staple: Pimento Cheese. But what about trying something that's easy and interesting? These Pressure Cooker Boiled Peanuts will do the trick. But what about a really fine fried chicken? Can you imagine showing up with crispy fried chicken and saying, "I made it myself"? WOW! This carrot salad (which doesn't sound as appetizing as it actually is) is a great party contribution. And what about pie? Apple Pie is as American as it gets and you can make a really great one when you doctor up some grocery store pie filling. Then, my all time favorite cookout food: Tennessee Onions. Oh, but you want to know what the baby and I will pack for our picnic? Probably a peanut butter and jelly sandwich and a banana if you want to know the truth. He hasn't learned all about the best foods out there yet..... yet. ____________________________ HOT COOKING TIP OF THE WEEK This week I cleaned off the shelf over my stove. That shelf is PACKED with stuff I pour into dishes while I'm cooking. I thought you might be interested in what someone who cooks all the time keeps at their finger tips to make cooking easier? Not that you need all of this at your finger tips, but if you can organize your space so that the things like this that you use all the time are handy, you might find cooking a simpler task. It sure helps me. Salt and Pepper - both in small open containers so that I can easily grab a pinch and throw it in. There's no searching, careful sprinkling or the like. I use Kosher salt, which has a nice large grain and is easy to manage and works especially well in a small bowl. Vegetable Oil, Olive Oil, Truffle Oil and Bacon Grease - quick decisions for cooking. Cooking Spray - both regular and Bakers Secret Liquid Smoke - for when something needs a hit of smoky flavor (works in meat dishes and soups). It is POWERFUL stuff, so just a drop or two. Browning Sauce - I don't know what this stuff is, but it give gravies a magical taste. Garlic Powder & Onion Powder - as quick additions for flavor. An assortment of vinegars (seriously, there are like 9 different bottles and none of them are white vinegar - obviously, I have a problem). I'm sure by now you are thinking, What a mess that shelf over her stove must be, and you wouldn't be wrong. It works for me though, so why would I want anything else?
