Hi! As you guys know, I basically live for a meal that requires minimal effort, but looks and tastes like it took hours. Now that the book is out I'm sharing a couple of these pantry staple recipes with you here, plus a few from the blog as well! Tuscan Tuna Pasta – Simple ingredients, big flavors. This is such a hit and feels fancy for a weeknight without requiring tons of effort. I usually like a long noodle for this one but feel free to mix it up! Fried Buffalo Chickpeas – Best snack ever!! This recipe takes chickpeas to a whole new level and let me tell you, they are addicting. You will never want to eat them any other way. Smoky Black Bean Burgers – What I love about this meal is that it could not be more customizable. Toppings are totally up to you, depending what you have on hand or what you're in the mood for! I love a good burger night and this is no exception. Tahini Stuffed Sweet Potatoes – This is a totally crave-worthy weeknight meal! And it could not be simpler.
