Mother's Day, All Day

Good morning! I have been a mother for 11.5 years and am still not an expert on what moms want for Mother's Day, be it a spa day away from kids, a fancy meal out, or a homecooked meal made by anyone who promises to leave the kitchen spotless. And so, why choose? Whether it's 8am (although, as a non-morning person, I'd rather it be 10) or 12pm or 6pm, I hope you'll find the ideal thing to cook, should you be spending this one close to home. Oh, and definitely don't sleep on that caramel tart; I've found its something absolutely everyone agrees on.

Herby mushroom and cheese crepes stacked into a showstopping cake for brunch or lunch this weekend is, well, my favorite, so I'll be right over, okay?

This is the kale salad that converted me, once a militant kale resistor, to the dark green leafy side. Cut into thin threads and tossed with vinegar-soaked golden raisins, sharp cheese, toasted walnuts and crispy breadcrumbs, I could eat a mile of it.

A savory dinner tart version of my favorite soup, replete with the sweetly cooked onions, a hint of broth, and the nonnegotiable broiled cheese lid. This is the exact pick-me-up a spring week needs, don't you think?

Ribboned asparagus (requires no trimming or parcooking), crumbled goat cheese (requires no grating) and optional crisped (in the final skillet) proscuitto make a quick spring frittata so easy, you’ll want it again tomorrow.

A forever spring favorite, you do not need one fancy thing to make this, save the freshest clams you can find. You can pick them up on the way home from wherever you’ve been able to distance today, knowing that cooking dinner will be the easiest part of it.

Never underestimate the power of a golden, crisp, thin, fried-but-somehow-not-heavy chicken breast piled with a seasonal salad to quickly become the most popular thing you know how to make. This is one of my favorite things to make for friends and family.

A sunny, simple, lemony Italian tea cake with the most incredible texture -- firm and almost crunchy at the edges, rich and plush within. The glaze, applied directly onto the hot cake, makes it look like a doughnut. You’re going to be so glad you baked this.
