Happy Memorial Day Weekend!!

Yes - it's now the start of the summer BBQ season!!

For me though, what really makes a BBQ delicious is what sides you cook to go with your BBQ - whether it's Korean or any other.

Making a salad is a must and so I have some really tasty and easy vegetable sides that really pairs perfectly with grilled meats.

 

BTW, I had to close down my Instagram giveaway sooner this week than I wanted to because a scammer account tried to phish credit card info from my followers after telling them that they won the giveaway!! So terrible!!!😑😱

Korean Potato Salad (Gamja Salad) is probably one of my most favorite dish to make with Korean Kalbi BBQ. It's similar to the classic American potato salad but the little difference in ingredients makes it a great medley of crunchy, creamy, sweet and refreshing flavors.

I am always pleasantly surprised how fresh cut veggies and ssamjang work as a perfect side dish for Korean BBQs. You just cut vegetables like carrots, cucumbers, bell peppers into long sticks and then serve some whole green chili peppers (Jalapeno or Korean green chili or Anaheim) with a side of ssamjang. So easy and simple!

Ok, I'm calling these Kimchi Salads for lack of a better phrase... but what I wanted to convey was that there are certain vegetable dishes that kind of have the flavor profile of a Kimchi except that it's not fermented so it doesn't take hours to make and days to ripen so it doesn't have the deep funky flavor but yet there are still sooooo good!!

My Kalbi marinade can be made simply in the blender - which means no chopping needed. I also add red wine which makes it extra flavorful.
