Now that spring is in full swing, you're probably seeing asparagus pop up at your local market. And while it's delicious roasted with a little olive oil and sea salt, it makes a delicious soup, too.
It's actually one of my family's favorite springtime recipes, and I think you'll like it, too.
Here's why:
- It's delicious. You start with leeks and butter, and then add asparagus, chicken broth, and bay leaf. A little bit of cream finishes the soup.
- Asparagus is rich in folate which supports healthy cell growth and is especially important for women of reproductive age.
- Butter and a little cream give the soup deep flavor and help you to get the most out of asparagus's fat-soluble nutrients.
- It's simple to make.
